1284575 Treating proteins; enzymes ROHM & HAAS CO 30 Oct 1969 [1 Nov 1968] 53233/69 Heading C3H A process for the improvement of the physical properties of isolated protein comprises solubilization by contact with an enzyme derived from a bacterium of the genus Bacillus and able to render isolated protein dispersible in water to form a colloidal system and, at the same time or subsequently, hydrolysis by contact with an enzyme derived from Aspergillus oryzae or A. niger and able to render solubilized protein non- precipitable or difficultly precipitable from aqueous solution. The preferred source of the first enzyme is B. subtilis. The process is applicable to protein isolated from soya beans or fish. |
