<p>The amount of working to which the dough is subjected is measured and indicated by an instrument such as a wattmeter, pref. associated with an ammeter. The wattmeter is connected in the circuit between the electrical mains supply and the kneading machine drive motor. Attention to the wattmeter makes possible to give every batch of dough a similar amount of working. There is no danger of a batch being over-kneaded or under-kneaded so consistently good bread is assured.</p> |
