PURPOSE:To obtain a safe and odorless emulsion preparation having white color and higher emulsion stability and oxidation stability than natural lecithin, by using a hydrogenated lecithin as an emulsifier. CONSTITUTION:A hydrogenated lecithin, preferably a hydrogenated lecithin having an iodine value of <=30 is used as an emulsifier to obtain a stable emulsion preparation. The amount of the hydrogenated lecithin is 0.1-30%, preferably 5-20% (in terms of pure phospholipid) based on the amount of oil and fat. An odorless white lecithin originated from egg yolk or soybean is used as the raw material of the hydrogenated lecithin. A white and odorless emulsion preparation having high safety to the living body and improved emulsifiability, emulsion stability and oxidation stability compared with natural lecithin can be produced by this process.
