PROBLEM TO BE SOLVED: To provide extremely low protein bread having a protein content of≤1/10 based on that of wheat flour bread. SOLUTION: This method for producing the low protein bread is characterized by using a dough prepared by adding a thickening polysaccharide in an amount of at least≥1.5% based on the amount of the flour dough as a film-forming material, a proper amount of pregelatinized starch (pregelatinized nonglutinuous rice or the like) as a hardening inhibitor, andβ-amylase to the flour dough containing starch (a proper starch such as wheat starch, potato starch or rice starch) as a main component, as a bread dough, and then producing the bread from the dough by a conventional method.
