PROBLEM TO BE SOLVED: To provide an apparatus for producing frozen dessert designed so as to effectively eliminate overload applied on a compressor caused when cold storage operation performed after heat sterilization operation is pulled down. SOLUTION: The apparatus for producing frozen dessert works as follows: supplying a high-temperature refrigerant discharged from a compressor 18 to a cylinder cooler 11 to perform the heat sterilization operation of a mix; performing cold storage operation where the refrigerant passed through a condenser 20 and a capillary tube 25 is supplied to the cylinder cooler 11 after finishing the heat sterilization operation; and operating a condensing fan 17 when an outside air temperature is higher than a prescribed upper limit value based on an output from a CT sensor in the heat sterilization operation.
