Doughpiece handler between kneader and bake tray prevents damage to the douh by ensuring that the handler must wait until the kneader stops. A toggle locking lever with locking nose is fitted to the machine stand to loch the kneader plate in its open end setting where it is exactly under the grip head forming part of the handler equipment. An excentric or cam mounted on this head varies the spacing between this head and the holder and in this way releases the toggle lever as a function of canges in this spacing. The cam releases the toggle once per turn and holds it thus until the kneader holder has moved through.
