A filled container, which is equal in every respect to the food container to be sterilised is used as a control during each sterilisation process. A jacket thermocouple relays the thermoelectric e.m.f's which occur according to the temperature changes in the thermocouple, to a control organ outside the steriliser tank. The control organ converts the thermoelectric e.m.f's into the sterilisation value, ends sterilisation by beginning the cooling phase and ends the cooling phase after a predetermined temperature has been reached at the critical point in the control container.
