摘要 PURPOSE:To obtain the subject keeping-quality-improving agent composed of a food preserver containing organic acids as the main components and curculin and capable of improving the shelf life without reducing the flavor, etc., of a cooked food. CONSTITUTION:This keeping-quality-improving agent for cooked food is composed of (A) a food preservative containing organic acids such as acetic acid, adipic acid and lactic acid as the main components and (B) curculin. The content of the component (B) is 0.5 to 5.0wt.%, preferably 0.7 to 3.5wt.% and the amount of this keeping-quality-improving agent added to a cooked food is controlled so that the acidity may be adjusted to 0.05 to 0.5%, preferably 0.07 to 0.3%.
