PURPOSE:To obtain a formed rice wrapped with an egg skin, having excellent workability, quality and palatability and suitable for distributing in frozen state, etc., by pouring a specific egg liquid on a rice ball having a prescribed shape and heating the coated rice ball. CONSTITUTION:An egg liquid containing egg, preferably 3-30% (based on the egg) of an oligosaccharide, preferably 0.03-3% of a thickening polysaccharide such as xanthan gum, preferably 1-30% of starch and preferably I-20% of an edible oil and fat such as corn oil is prepared beforehand. Cooked rice is formed to a prescribed shape and the egg liquid is poured on the surface of the formed rice. The rice coated with the egg liquid is heated and preferably finally frozen to obtain the formed rice ball wrapped with the egg skin. |
