PURPOSE:To soften irradiation of soybeans with heat and to safely produce fermented soybeans with small consumption of electric power, by setting a preliminary chamber, an air charging chamber and an exhausting chamber at the upper part and both sides of a fermentation chamber, heating and cooling through a blower unit and a heat pump. CONSTITUTION:A preliminary chamber 3 equipped with a blower unit 13 is set at the upper part of a fermentation chamber 1 in which a fermented soybean preparation box 2 is laid, an air charging chamber 4 and an air exhausting chamber 5 provided with air holes 4a and 5a are attached to both side walls of the fermentation chamber. The preliminary chamber 3 and the chamber 5 are communicated with the open air through on-off valves 7 and 9 and ducts 8 and 11 to form an air charging and exhausting channel and a circulating channel. Then, for example, the on-off valves 7 and 9 are closed, a four-direction change valve 19 of a heat pump 15 is set to a heating side, the unit 13 is operated, air heated by heat exchangers 16a, 16b and 22 is circulated as shown by a solid line to heat fermented soybeans 2, then the change valve 19 is reversely converted to a cooling side to similarly cool the fermented soybeans 2. When dehumidification is carried out, the on-off valves 7 and 9 are opened, the dehumidification is carried out by air fed from a piping 8 through the piping 8 and a blower 10. |
