PURPOSE:To prevent occurrence of crack and shape deformation due to freezing or thawing by putting a gel-like food on a heat insulating plate, placing a heat- transmitting plate thereon, housing the food in a cooling gas atmosphere and subjecting the food to freeze treatment. CONSTITUTION:A gel-like food 1 (fermented soybean curd, custard-like egg and some ingredients dish steamed in a cup, jelly, etc.) is put on a heat- insulating plate 2 made of a heat-insulating material such as acrylic resin and a heat-transmitting plate 3 made of a raw material having high heat conductivity, e.g. stainless steel is placed thereon to form a laminate L for freezing. This laminate L for freezing is housed in a freezer and the gel-like food is frozen by a cooling gas. The frozen food hardly cause deformation due to freeze expansion. |
