PROBLEM TO BE SOLVED: To provide a heating cooker controlled to avoid overheating in such a manner that heating time is set on the basis of change rate in dose of infrared ray of a matter to be cooked and heating is finished at a set temperature. SOLUTION: The heating cooker comprises a heating compartment 2 for housing the matter to be coked, a magnetron 4 for heating the matter, an infrared sensor 6 for detecting the dose of the infrared ray from the matter, and a controller 12 that calculates the change rate V per every specified time on the basis of a value detected by the sensor 6 and sets residual heating time on the basis of the change rate V when the change rate is highest in detection.
