The invention relates to the food industry, in particular to a plant for drying foodstuffs of vegetable origin.The plant for drying foodstuffs in the first variant of execution comprises a chamber (1), wherein there are tiered up bottom plates (2) with perforated bottom and a carriage (3) with the possibility of horizontal reciprocal movement along a guide (4). Onto the carriage (3) there are mounted infra-red sources with reflectors (5), placed above each tier of bottom plates, a fan heating device (6) with a system of air-ducts for heat-transfer agent pumping (9) and discharge (13) with pumping holes (12) regulable by section. The pumping air-duct (9) is made in the form of two consecutively placed sectors, the first (10) of which is placed under the bottom plates along the lower base of the chamber, and the second (11) is brought into one of the end faces of the chamber, at the same time to the opposite end face of the chamber it is connected the discharge air-duct (13). Between the sectors of the pumping air-duct there is installed a heating device (15), and the pumping holes (12) are made onto the upper part of the pumping air-duct of the first sector.In the second variant of execution of the plant the chamber is equipped with an additional carriage (16) with the possibility of synchronous reciprocal movement with the first carriage, onto which there are mounted infra-red sources with reflectors (17), placed above each tier of bottom plates.
