摘要 The present invention relates to a cooking method of oatmeal-containing chicken. The cooking method of oatmeal-containing chicken uses oatmeal which is rich in dietary fibers and nutrients as a breading ingredient in order to add the specific savory taste of oatmeal to chicken and allow consumers to easily take ingredients which are beneficial for the human body. According to the present invention, the cooking method of oatmeal-containing chicken comprises: a cutting step (ST 1) of cutting and dividing chicken meat in a fixed size: a curing step (ST 2) of soaking the cut chicken meat in a curing solution: a cold aging step (ST 3) of aging the cured chicken meat at a low temperature of 0-5°C 12-24 hours; a battering step (ST 4) of putting the aged chicken meat into a batter mix to coat the surface of the chicken meat with the batter mix; an oatmeal breading step (ST 5) of adding the chicken meat coated with the batter mix to oatmeal and uniformly coating the chicken meat with the oatmeal; a first frying step (ST 6) of frying the chicken meat coated with the batter mix and the oatmeal at 160-170°C by using a fryer; a carving step (ST 7) of making cuts in the fried chicken meat; and a second frying step (ST 8) of frying the carved chicken meat at 170-190°C.
