The present invention concerns an improved method of preparing cold-pack crustacean meat products, which comprises adding a lantibiotic to the product prior to packaging and subsequently heat treating the canned product containing the lantibiotic at a reduced temperature as compared to prior art cold pack heat treating processes. The invention also concerns crustacean meat products produced by the inventive process. |
