The invention relates to a process and an installation for preparing a protein concentrate from Calluna vulgaris honey. The claimed process consists in separating the honey solution by dialysis, for 24 h, at a temperature of 18°C, a stirring rate n=10 rpm, separating therefrom the permeate with glucide content and the retentate with a content of proteins having a molecular mass > 3.5 kDa as colloidal solution, which is subjected to purification by reversed phase chromatography, resulting in a purified protein concentrate wherefrom the total protein is determined by usual data processing methods, and the enzymatic proteins contained in the separated and purified protein concentrate obtained from honey are identified by electrophoresis. The claimed installation comprises a module for separating the proteins from honey and a module for purifying the concentrate by reversed phase chromatography. |
