Semiviscous product obtained by dialysis of pref. a milk concentrate (to separate milk salts and sugar) and/or enriched with milk protein, is mixed with wheat flour pref. pre-gelled (esp. protein-rich); the mixture is freeze-dried, and the product is comminuted to powder. A dough is prepd. by adding to a flour (pref. wheat flour), the above protein concentrate in such an amount that the protein content in the dough is 30-50% (by dry wt.). By this method, a large amount of proteins can be introduced into bread or other flour-base products (esp. recommended for diabetics) without affecting their taste. |
