The invention relates to a method for packaging and preserving eggs consisting of an egg thread surrounded by reserve substances, namely the yolk and the white, and protected by a shell, characterised in that the shell is broken, the reserve substances are separated from the debris thus obtained and the reserve substances are packaged under vacuum in a leaktight package. The invention also relates to an installation permitting implementation of the invention, characterised in that it comprises a supply conveyor belt 3 equipped with cavities 4 intended to receive the whole eggs 1 in order to convey them to a breaking and separation station 2, as well a distribution station 5 ensuring positioning of the reserve substances of the eggs 1, when the said reserve substances have been separated from the shells at the breaking and separation station 2, in cavities 6 in a support sheet 7, in particular made from aluminium, which is continuously moving, a station for applying an upper film 8 on the support sheet and a station for sealing the film 8 onto the sheet 7, the latter station being located in a vacuum chamber 9. <IMAGE>
