PRODUCTION OF SOL-LIKE FOOD CONTAINING GRANULAR FOOD

PURPOSE:To obtain a sol-like food containing granular food not causing precipitation or floating of granular food even if it is preserved for a long period by adding a granular food to an aqueous solution obtained by adding gellan gum to water and dissolving gellan gum into water by heating and then cooling the mixture to <= gelling point under stirring. CONSTITUTION:Gellan gum in an amount of 0.02-1.0 pts.wt. is added to water in an amount of 100 pts.wt. and gellan gum is dissolved into water by heating. A granular food is added to the resultant aqueous solution and the temperature of the mixture is cooled to <= gelling point, normally 5-40 deg.C under stirring. The granular food (e.g. seed or sack of orange fruit) is added to the aqueous solution in heating, stirring and dissolving or in stirring and cooling.
