PURPOSE:To provide a method for producing konjak (a Japanese product from devil's tongue) processed food free from odor characteristic to konjak, having good taste, capable of giving a state capable of adding favorite ingredient materials or forming to arbitrary shape, capable of irreversibly obtaining konjak-like texture by treatment such as heating and excellent in keeping qual ity. CONSTITUTION:The method for producing konjak-processed food comprises swelling devil's-tongue elephant roots, processed konjak flour or glucomannan in an aqueous solution containing one or two or more compounds having buffering ability and having pH 4.0-7.5, mixing the swollen liquid with a basic compound to control pH to alkalinity of >=8.0 and <=10.0, packing into a vessel and hermetically sealing the vessel, heating the vessel to >=60 deg.C and <=150 deg.C and then cooling the vessel to ordinary temperature. |
