According to the present invention, to increase an added value of coffee as a cosmetic raw material, with reference to Luwak coffee traded at high costs in a conventional food and beverage field, a ratio of a digestive organ of a civet cat to produce the Luwak coffee and digestive enzymes is emulated. In addition, a coffee extract in which Luwak coffee is artificial is developed through the qualitative and quantitative analysis of flavonoid polyphenol, which are newly bio-converted using a rumen microorganism, and an amino acid finalizing characteristics of Luwak coffee causing a unique flavor. |
