PURPOSE: To prepare emulsified food products such as mayonnaise, dressing, milk, butter, margarine, shortening or the like by utilizing the emulsification action of a new and natural particulate green tea. CONSTITUTION: This emulsified food product is produced using an emulsifier comprising fine particles of green tea leaves having less than 50μm particle sizes and 5-20μm average particle size. Thus, emulsified food product containing lipid such as mayonnaise, dressing, milk, butter, margarine, shortening or the like can be produced using an emulsifier having excellent emulsification action and physiological functions. |
