PURPOSE: To obtain a canned cooked food with the taste inherent in the food material retained, excellent in nutrition, palate feeling and flavor, with the taste in its cooking remained. CONSTITUTION: This food consists of such contents that food material(s) has been put into a can and sealed and then cooked so as to make the best use of the taste inherent in the material and leave the taste, palate feeling and flavor thereof intact. The can be served as a container for low-temperature cooking. The canned food with the food material contained therein and just after sealed stands nearly in a vacuum state of pref. 10-70cm Hg. The food material(s) prior to being canned and sealed may have been heated or not. The objective cooked food may be a semifinished product. By this invention, gourmet dishes can be produced industrially to sustainably supply dishes excellent in the food service industry and a group of nearly handmade dishes different from retort canned foods can be served in the form of canned food. |
