PURPOSE:Monoglyceride, propylene glycol monostearate and an oil are used for manufacturing ''Baumkechen'' (Germany cake), thus giving the products with thick layers and soft texture. CONSTITUTION:A monoglyceride of 22C saturated fatty acid as monoester of behenic acid and glycerol, 0.5-3%, propylene glycol monostearate, 6-10%, and liquid oil as rape seed oil, 87-93.5%, are mixed to give said shortening. |
