发明名称 METHOD OF TREATING JAPANESE YAM *DIOSCOREA JAPONICA*
摘要 PURPOSE:Japanese yam is stored in a freezer after some treatment, whereby forzen Japanese yam that can offer the yam soup with the same taste as that made from fresh yam even after thawed, is stored. CONSTITUTION:Japanese yam is peeled and, when necessary, cut and stored in a vessel 1 filled with nitrogen or carbon dioxide gas. The pieces of yam are sent with conveyor 2 into tank 3 into which liquid nitrogen or carbon dioxide is sent from tank 11 through pipe (a) to freeze the pieces rapidly. The pieces of yam cooled to about -50 deg.C is sent with conveyor 4 so as to reduce the accompanying flow of the liquid nitrogen as little as possible into revolving disc type crushing mill 5 that is kept to about -40+ or -5 deg.C where the pieces are crushed. The crushed yam is passed through a screen that is kept to about -40 deg.C to receiver 6 and stored in the freezer.
