PURPOSE:To provide the subject substance obtained from the water-soluble extract of the heats of tunas and bonites, having a specific mol.wt. and a specified optimal calcium concentration, dependent on calcium and useful for fish kneaded products, etc. CONSTITUTION:The objective substance is obtained from the water-soluble extract of the hearts of tunas and bonites, has (A) a mol.wt. of 99000+ or -2000 (by a gel filtration method using superose 6HR or superose 12HR), preferably 90000+ or -5000 (by a I10% SDS-PAGE) and (B) a optimal calcium concentration of 0.01-50mM, and is dependent on calcium. The substance is obtained by subjecting the water-soluble extract of the hearts of tunas, etc., to an ion exchange chromatography, calcium-dependent affinity chromatography and gel filtration fractionating treatments. |
