The reaction product between amylaceous materials and cyanamide or an alkali metal or alkaline earth metal salt thereof in an aqueous medium is dried to a moisture content below the equilibrium value, as measured at 20‹ C. and 70% R.H., the product having a pH below 6 at the start of drying, and is packed in substantially water impermeable containers, whereby chemical changes during storage are inhibited. In examples depolymerized potato starch and amylopectin are treated. The moisture content may be reduced to at least 3% below the equilibrium value using an initial pH below 5 and the product may have been gelatinized. Salts having a buffering action below pH 6 may advantageously be added before or after drying; e.g. aluminium sulphate, magnesium chloride or sodium dihydrogen phosphate. Containers of polyethylene or metal may be used. |
