CONSTITUTION: A bulk starter is prepared from dried synthesized bacterial strains comprising Streptococcus thermophilus and Lactobacillus delbrucckii.Subsp.bulgaricus and charged into sterilized milk such as raw milk kept at 43 deg.C and stirred and filtered and put in a plastic or glass container and a process for lowering the temperature (2.5-3.0 deg.C/hr) is carried out for 4-5hr and the milk is fermented and converted into lactic acid fermented one and kept at about 18-20 deg.C for 1.5-2.0hr, and further, chilled and kept at about 4 deg.C for 8-10hr and its acidity is kept to pH4.5-5.5 to provide the objective Gruziya lactic acid product-1 having good palatability, slight acidic taste and aged taste, natural flavor and actions such as functional recovery of the stomach and intestines and activation of immune system.
