PROBLEM TO BE SOLVED: To provide a red color-based pigment-nonproducing Monascus bacterial strain as compared with a conventional Monascus. SOLUTION: Provided is a filamentous bacterium characterized by producing no red color-based pigment and belonging to genus Monascus. The filamentous bacterium of this invention belonging to genus Monascus has mycological properties as an original Monascus, consequently red malted rice, which can not be produced by using the conventional Monascus strain and in which the expression of the red color-based pigment is reduced or deleted, can be obtained by using the filamentous bacterium. Such red malted rice is available as a material for health foods in which the discoloration of red color is not needed to consider as well as a blending material for modulating the tone of color in the powdery products of red malted rice.
