PURPOSE:To prepare the titled solid food having high and balanced nutrient and excellent taste and flavor, and suitable for spreading on bread, by dissolving a phosphoric acid salt, etc. to processed fruits, etc., dissolving casein, etc. in the solution under heating, adding edible oil or fat and processed fruits, etc. to the solution, and heating the mixture under stirring. CONSTITUTION:A phosphoric acid salt or sodium citrate and if necessary salt are added and dissolved in processed vegetables or fruits subjected to the alco holic fermentation, and a protein component such as rennet casein, acid casein, casein, Na, soya protein, wheat protein, defatted milk powder, and if necessary starch or gum are added to the above solution, and dissolved under heating. An edible oil or fat and the remaining processed vegetables or fruits including those subjected to alcoholic fermentation, are added to the solution, heated under stirring, if necessary adjusted its pH with an organic acid, and kneaded to obtain a mixture wherein the weight ratios of (protein component):(edible oil or fat):(processed vegetables or fruits) are 1:(0.8-1.4):(1.9-3.3). The objective food can be prepared by adding 0.3-3.5wt% phosphoric acid salt or sodium citrate to the above three components. |
