PURPOSE: To obtain the subject yolk economically and advantageously in terms of operation by adding a fatty acid, etc., to liquid egg yolk and bringing the mixture into contact with carbon dioxide in a supercritical state to extract cholesterol-containing fats. CONSTITUTION: This yolk having low fat/low cholesterol is obtained by blending 100 pts.wt. of liquid egg yolk with a fatty acid and/or a monoglyceride such as an edible oil hydrolyzed with a lipase, containing 50-80wt.% of a fatty acid and/or a monoglyceride and bringing the blend into contact with carbon dioxide in a supercritical state to extract cholesterol-containing fats. |
