PURPOSE:To prevent the discoloration in pieces of tuna meat in thawing and make it possible to preserve the tuna meat for a long period, by enclosing the tuna meat scraped in the form of flakes in a specific thickness in a synthetic resin bag and freezing the tuna meat. CONSTITUTION:The meat part of tuna is scraped in the form of flakes with a sharp sword in the form of a spoon, and the resultant flakes are then contained in the flat form of <=1.2cm thickness in a vinyl bag or polyethylene bag, which is then sealed up to freeze the flakes.
