PURPOSE:To obtain the subject additive useful as a calcium-enriching agent, an acidulant, a seasoning, a stabilizer, etc., by reacting fine powder of egg shell with a solution of an edible organic acid and using the obtained calcium salt as a main component. CONSTITUTION:The objective additive can be produced by reacting fine powder of egg shell with a proper amount of a solution of an edible organic acid (e.g. lactic acid, citric acid, malic acid or tartaric acid). |
