The present invention relates to new pectinases, more particularly to the nucleic acids encoding the same as well as homologous and heterologous expression systems using the regulatory and/or coding sequences comprised in said pectinase nucleic acids. More particularly, the present invention relates to new yeast pectinase polynucleic acid and amino acid sequences, and yeast (heterologous) expression systems based thereon. The present invention also relates to new pectinases or fragments or derivatives thereof for use in food processing.
