PROBLEM TO BE SOLVED: To provide a method for producing a galactooligosaccharide producible at a high temperature, having a slight possibility of contamination with various germs and a high yield of galactooligosaccharide based on a raw material lactose. SOLUTION: Lactose or a lactose-containing substance is treated with a β-galactosidase derived from a bacterium belonging to the genus Thermus. The bacterium belonging to the genus Thermus is any strain selected from FERN P-9,184(FERM BP-1,678), FERM P-9,185(FERM BP-1,679), FERM P-9,186(FERM BP-1,680) and their mixed strain. |
