PROBLEM TO BE SOLVED: To provide a method for injecting a fish meat particle suspension into the processed product of fish meat, capable of injecting the fish meat processed product, especially tuna meat processed product and homogeneously distributing the injected suspension by grinding the fish meat into particles, adding the particles to diluted salt water, and subsequently injecting the obtained suspension into the fish processed product at a specific temperature, etc. SOLUTION: This method for injecting a fish particle suspension into the processed product of fish meat comprises grinding the fish meat, especially tuna meat, into particles, adding the particles to diluted salt water, and subsequently injected the obtained suspension into a fish processed product having a temperature of -2 to 8 deg.C. The fish processed product is optionally stirring and emulsified. The water content of the suspension before injected is preferably 85-90%, and the concentration of the salt is preferably 4 to 8%. The temperature of the suspension is preferably -14 to -4 deg.C. In order to obtain the <1 mm particles, the suspension of the meat particles is preferably finely ground prior to the injection process. |
