The invention relates to a composition for storing chopped ginger-root which is obtaining by uniformly combining 1.0-4.0% of cyclodextrin, 2.5-3.5% of purified salt, 200-500ppm of K2S2O5, and 0.01-0.5% of ascorbic acid. Chopped ginger-root combined with said composition has excellent storage stability such that it can be stored in vacuum at cold temperature for 4 weeks or longer without browning and rotting.
