摘要 PURPOSE:To furnish the subject preventive which contains a thickening polysaccharide, thus gives buckwheat vermicelli high storage stability, processability, good texture and elastic feeling without blackening for a long period of time. CONSTITUTION:The objective preventive contains a thickening polysaccharide selected from alginic acid, xanthene gum and cassia gum as an active ingredient. The preventive is preferably admixed to the buckwheat flour in an amount of 0.1 to 3wt.% on the solid basis.
