PURPOSE:To produce a dried powdery solid having improved storage stability, handleability, utility, etc., of the extract component of mushroom by clathrating an aqueous extract liquid of the fruit body or mycelium of a mushroom with a branched cyclodextrin and drying the clathrate product. CONSTITUTION:The fruit body and/or mycelium of a mushroom are extracted with water or a water/ethanol mixture, the extraction residue is removed and the obtained aqueous extraction liquid is treated with a branched cyclodextrin to effect the inclusion of the extract component in the cavity of the branched cyclodextrin molecule. The liquid containing the clathrated mixture is spray- dried preferably at an inlet temperature of 150-180 deg.C and an outlet temperature of 70-90 deg.C to obtain the objective dried powder. The clathration is preferably carried out simultaneously with the extraction. Concretely, 1 pt.wt. of the mushroom and 0.5-5 pts.wt. of the branched cyclodextrin are added to water or a water/ethanol mixture to proceed the extraction parallel to the clathration of the extract. |
