PROBLEM TO BE SOLVED: To obtain a boiled fish paste having a horse-radish taste, promoting an appetite, useful as a food for a sick person and a person in a care facility besides a daily dish and a relish for a rice wine, by blending a dough for boiled fish paste with a horse-radish flavor-containing cyclodextrin solution, forming and heating and coagulating the dough at a relatively low temperature. SOLUTION: A dough for boiled fish paste produced by an existing production process for boiled fish paste is blended with a horse-radish flavor-containing cyclodextrin solution, formed, heated and coagulated at <=90 deg.C heating temperature of the dough and cooled to give a product. A horse-radish flavor vaporized by saliva in a mouth spreads in the mouth when the product is eaten. |
