PROBLEM TO BE SOLVED: To provide bonito powder which can well be dissolved in cooked products, miso (salted and fermented soybean paste) soups, etc., and which is soft and easily drinkable, also when slightly left on the bottom of a bowl for the miso soup, and to provide the method for producing the same. SOLUTION: This bonito powder is produced by cutting a raw bonito as a raw material, boiling the cut bonito, drying the boiled bonito, finely granulating the obtained semi-dried bonito, freeze-drying the granules and subsequently grinding the dried product into the powdery product. Thereby, traditional processes for producing the dried bonito behind the drying process can be saved, and the bonito powder is easily obtained in a short time. |
