PURPOSE:To obtain a food of delicate flavor rich in protein, having the taste and the fragrance of its own, made from crucian carp as a raw material, by using both the meat and eggs roasted for a long time by a slow fire so that the meat can be easily separated from the bone. CONSTITUTION:Crucian carps landed are washed with dilute salt water to remove the viscosity of the fish, its fish-like smell and water adhering to their surface, and roasted on a wire netting by a slow fire about three hours so that the water content in the fish is eliminated and the meat can be separated from the bone with ease. The meat and eggs are prepared from the roasted fish and formed into a shape nearly as big as that of soybean grain. The shaped foods are then put in a hot plate like a frying pan, fried in edible oil, e.g., rape oil, sesame oil, etc. by a hot fire until they change to yellow, and seasoned by coating fully the foods with a mixture of cayenne red pepper, miso, and if neccessary, flavoring. |
