A composition of ground cereals has a moisture contents of 10-15% and particle size 5-350 mu m, and is activated for baking when mixed with salt and water. The composition has a sour grade 4 according to the Schulerud method. The composition is obtained from a cereal mixture with a rest moisture of 11-16%, which is ground and treated to remove the bran and endosperm from the corn. The removed bran is soured and remixed with other cereal, which has been dried to a moisture of 10-15%. The cereal comprises rye and wheat. |
