PROBLEM TO BE SOLVED: To provide a protein sheet excellent in flexure strength and extensibility and a manufacturing method of the protein sheet.SOLUTION: There is provided a protein sheet containing thermal coagulable protein and casein or a salt of casein and having moisture content of 30 mass% or less. The protein sheet can be manufactured by a manufacturing method of the protein sheet having a process of expanding a sample liquid containing the thermal coagulable protein, casein or the salt of casein and a solvent in sheet like and a process of making sheet by removing the solvent.SELECTED DRAWING: None
