摘要

PURPOSE:To provide highly triglyceride-containing oils and fats in a high yield and at a low cost without accompanying a change in the composition of the triglycerides, by allowing a partial glyceride lipase to act on oils and fats containing partial glycerides and fatty acids. CONSTITUTION:A partial glyceride lipase (preferably lipase originated from Penicillium.cyclopium ATCC 34613 strain) is allowed to act on oils and fats containing partial glycerides and fatty acids to subject the partial glycerides to ester synthesis and perform the modification of the oils and fats. The above- mentioned enzymatic reaction is preferably carried out under the water content of the reaction system adjusted to 10-200ppm and at 20-80 deg.C.
