PROBLEM TO BE SOLVED: To obtain three-layered noodles free from skin roughness, excellent in appearance, having elasticity and transparent appearance, and having a high quality in good productivity in simple processes by using a noodle raw material having a rough protein content controlled to a specific rate and used for producing the outer layers. SOLUTION: This method for producing three-layered noodles by a three- layered extrusion method comprises performing the three-layered noodle extrusion method using a noodle raw material having a rough protein content controlled to 6-15 wt.% and used for producing the outer layers, rolling the produced three-layered noodle strip and subsequently cutting the rolled noodle strip into noodle lines. It is preferable to use a noodle-producing raw material controlled so as to have a rough protein content difference of >=0.2 wt.% between the noodle raw material for the outer noodles and the noodle raw material for the inner noodles. It is further preferable to carry out the three-layered extrusion under vacuum. |
