摘要 Readily soluble proteins are produced by (a) mixing water-soluble alkalis with solid hydrophilic proteins in the presence of such an amount of water that during and after the reaction there results a moist, crumbly to free-flowing mass, the proportion of water being sufficient to ensure reaction of all the alkali with the protein before decomposition of the latter occurs, and (b) removing unbound water by drying. This process enables dried proteins suitable as food additives and as emulsifiers for meat products (esp. Na and Ca acseinates) to be produced in a way such that the amount of water which has to be removed by drying is minimised and denaturation of the protein does not occur.
