<p>The fat is warmed to above its m.pt. and pumped, after gas pressurisation/mixing esp. using N2, from a supercooler to a delivery line feeding spray nozzles in the separate mixing/kneading machines via solenoid valves. A further solenoid valve connects the delivery line to an overflow tank. There is a flow meter upstream of the cooler unit to shut off the valves to the nozzles and open the bypass after the required quantity has been measured out. The sprayed fat is of creamy consistency and its particles bond quickly to the flour, sugar etc. but do not coagulate so reducing mechanical power demand for mixing and improving texture.</p> |
