PRODUCTION OF YEAST EXTRACT

PROBLEM TO BE SOLVED: To obtain a yeast extract high in the content of L-glutamic acid as a taste-reinforcing substance by culturing a yeast having resistance against specific medicines and improved in an ability to accumulate the L-glutamic acid in the cells. SOLUTION: A medicine-resistant yeast (e.g. Yarrowia lypolytica AJ14718) obtained by treating a yeast such as the Yarrowia lypolytica with UV light or a mutagenic agent to impart the resistance against medicines (e.g. nystatin) giving damages to the structures and functions of cell membranes is cultured. The cells of the cultured yeast are subjected to an autolysis, and subsequently concentrated under vacuum. The obtained extract is spray-dried to give the powder yeast extract.
