PURPOSE:To obtain an acid tasting food in the form of an irreversible gel stable for a long period, by coagulating an oil-in-water type slurry containing an acid tasting material, heat coagulable material an foam sol under heating. CONSTITUTION:An acid tasting food and drink obtained by incorporating an acid tasting material selected from organic acids and/or natural acid tasting materials and a heat coagulable material selected from various polysaccharides and/or heat coagulable proteins in an aqueous phase, an oil or oily phase, aque ous phase and oil or aqueous phase and oily phase, converting the resultant raw material finally into an oil-in-water type emulsion in a high concentration consisting substantially of quasi-bound water and bound water with almost no free water, and containing foam sol having 20-500mu average particle diame ter, molding the resultant emulsion, and coagulating the molded material while heating at about >=120 deg.C under ordinary - reduced pressure by electromagnetic dielectric or induction heating. |
